Basquenese’s Cheesy Croquetas

These are easy to make, but they are a labor of love.
But, if you’ve got a group to feed, these make great finger foods! ENJOY!
What you’ll need:
2 cups all-purpose flour
1 stick of butter
3 cups of milk
salt
pepper
1.5 cups of shredded cheese (your choice, but I love Tillamook’s sharp cheddar)
2 cups panko breading
2 eggs
pinch of paprika
pinch of salt
pinch of parsley flakes
Oil for frying
In a skillet pan, melt butter and add flour, salt and pepper.
Whisk mixture and gradually add in milk.
Add cheese and continue whisking.
The bechamel’s consistency needs to be thick, creamy, and smooth. It will take some time.
Transfer to a casserole dish or tupperware and refrigerate for a few hours (completely let it cool down).
In a bowl, whisk eggs
In another bowl, add panko, pinches of salt, parsley, paprika
Take bechamel out of fridge, grease hands with some oil and roll into small balls.
Roll in eggs and transfer to panko
Fry croquetas until golden brown (but not too long or they’ll burst!)
