Mama’s Chicken

I couldn’t believe how POPULAR this dish was when we first launched it!

Growing up, this was our comfort dish. Mom always made it with chicken drumsticks served with white rice and a tangy salad to balance out the dish. We hope you enjoy!

  • 1 package of chicken thighs or drumsticks (you can use boneless, or skinless, but it tastes best with the skin on)

  • 1 bag of Barbie’s Mama’s Chicken flour blend (this is a special blend of spices, tapioca starch, flour, and salt) But if you don’t have any on hand, go ahead and mix some tapioca starch and flour together

  • 1/3 cup of Barbie’s Mama’s Chicken Seasoning

  • 1/4 cup of soy sauce (your choice, but I use low sodium)

  • 3 tbsp sugar

  • Thai basil (optional)

  1. Cut chicken thighs into bite-sized chunks (your preference). If you’re using chicken drumsticks, cut a few lines into the meatiest part of the drumstick.

  2. In a separate bowl, mix Barbie’s Mama’s Chicken Seasoning and sugar together and pour over chicken.

  3. Put chicken into a Ziploc bag and pour in soy sauce

  4. Marinate for 1 hour or overnight for best results

  5. In a separate bowl, put flour mixture together

  6. Coat chicken evenly with flour

  7. Fry chicken until internal temperature reaches 165 degrees and golden brown on the outside

  8. Place on cooling rack

  9. If you want to replicate Basquenese’s popcorn chicken version, fry up some thai basil

  10. ENJOY!!
